Culinary & Innovation Chef

Job Purpose:

Responsible for the development of new concepts for all products categories within the TCFG portfolio & driving high levels of culinary innovation within a fast-paced environment

Reports to:

Executive Innovation Chef

Key Responsibilities:

• Responsible for the development of innovative, culinary product concepts working on customer briefs, blue skies concepts & existing product re-developments
• Kitchen-based recipe development across all the product categories including natural stocks, flavoured butters, crumbs, culinary sauces & pasta according to TCFG manufacturing/technical requirements
• Deliver innovation presentations, samples & new product concepts to manufacturing, food service, and retail customers
• Responsible for repeat customer sample requests ensuring consistency & timely sample submissions and documentation of all data
• Communicate internally on project deliverables and externally to customers to meet their requirements
• Complete all paperwork including approved recipes, new raw material source data, recipe costings, and product information sheet generation for all projects worked on
• Organise and prepare product samples for dispatch to customers daily
• Prepare ingredient and packaging orders through inventory control against SOP
• Attend customer update meetings and progress project approvals through the stage gate process
• Communicate to external customers and the commercial team regarding project deliverables daily to ensure all customer briefs are responded to in full & a timely manner
• Co-ordination of benchmarking of competitor products including application testing of TCFG products
• Attendance at internal development meetings and sensory analysis panels as required
• Assist the Culinary & Innovation Technologists and C&I Managers with specific customer projects
• Maintain awareness of the market, market insights, consumer, restaurant trends and competitor activity through market study visits, safari’s, and exhibitions
• Assist in managing the development kitchen to a safe working environment to meet GMP standards
• Support the Senior Development Chef and Executive Innovation Chef in delivering all project deadlines
• Present proactive Innovation presentations to the retailers using the Chef Drop Platform
• Participate in any continuous improvement projects within the Culinary & Innovation centre
• General administration, kitchen & office duties

Skills / Qualifications / Experience:

Essential
• Culinary Arts Degree or similar qualification. A history of working in fine dining establishments
• A passion of love for food is a must
• Proactive, positive can-do attitude
• Good interpersonal skills
• Good time management & communication skills
• Is a creative and solution-focused thinker
• Team mentality
• Up-to-date trend knowledge on all areas of food innovation. A strong understanding of Irish and International cuisine and culinary trends
Desirable
• Articulate product presentation skills
• Microsoft Office proficient
• SharePoint knowledge is preferable but not necessary as training will be provided

Note: As with all positions, due to the dynamic nature of Arrow Group business, key responsibilities will evolve and change over time. Some travel will be required. Appointment to this role is subject to the candidate’s eligibility to work in Ireland
